Lazy lunch wrap

Lazy lunches are my favorite. You can prepare the sauce and wrap-filling in advance and take it with you to work or school. Or eat the wraps as your dinner and take your leftovers with you the following day.

Ingredients (2 persons)


  • 4 whole-wheat tortilla wraps
  • 4 tomatoes
  • ½ can of corn
  • ½ can of black beans
  • 200 gr of skinless chicken breast, in small pieces
  • Salt and pepper to taste
  • 2 handfuls of lettuce


  • ½ cup of greek yogurt, low-fat
  • 5 sundried tomatoes, soaked in water
  • 2 cloves of garlic
  • Salt and pepper to taste  


  1. Place a pan over medium heat and add a tablespoon of olive oil to the pan. Cook the chicken breast until golden brown and thoroughly cooked.   
  2. Add the tomatoes, corn, and black beans to the pan and cook for a few minutes.
  3. Add pepper and salt to taste and mix well to combine.
  4. For the sauce, add the yogurt, sun-dried tomatoes, garlic, and salt and pepper to a blender and mix to a smooth consistency.
  5. Add a scoop of sauce to each wrap. Add another scoop of the chicken mixture and place a handful of lettuce on top. Fold the wrap close.   


If you prefer to keep your wrap vegetarian, swap the meat for tofu. Add more flavour to the tofu by adding onion powder, garlic powder and other seasonings like ground cilantro or ground thyme.
