Magnificent mood-boosting salad

The foods in this recipe are high in magnesium, zinc, and omega-3. These minerals and fatty acids will do wonders for your mood. Diet can have a big impact on how you feel. Fruit and veggies will go a long way to make you feel your happiest.

Ingredients (2 persons)


  • One half of an avocado
  • 200 grams of skinless chicken breast
  • 4 cups of spinach, roughly chopped
  • 2 tomatoes
  • One half of a cucumber
  • 1 can of chickpeas, drained
  • 1 handful of chopped walnuts
  • 1 red bell pepper


  • One half of an avocado
  • ½ cup of cilantro
  • ¼ cup of plain greek yogurt
  • Salt and pepper to taste
  • 1 tbsp of lemon juice
  • 2 cloves of garlic


  1. For the dressing, add all the ingredients to a blender and blend until smooth.
  2. For the salad, place a pan over high heat and add a tablespoon of oil. Cook the chicken breast on each side until cooked through and golden brown.
  3. Cut the other ingredients into small pieces and add to a bowl. Add the chicken to the salad and drizzle the dressing on top.
