Soulful sweet potato salad

If you think salads aren’t for you, you need to try this one. Seriously, you’ll love this salad! The time of sad little blobs of lettuce are over! This salad is colorful and filling. You can prepare it in advance and store it in the fridge in an airtight container. Take it with you on the go or to work. The roasted pine nuts add a delicious crunch!  

Ingredients (2 persons)


  • 2 sweet potatoes
  • 1 can of chickpeas, rinsed and drained
  • 2 tomatoes, in cubes
  • 1 cucumber, in cubes
  • 1 red onion, in rings
  • About 1 bag of spring mix ( 5 oz)
  • ¼ cup of roasted pine nuts
  • 1 tbsp of olive oil
  • Salt and pepper to taste


  • 2 tbsp of tahini
  • The juice of 1 lime
  • Salt and pepper to taste  


  1. Preheat the oven to 450°F.
  2. Peel the potatoes and cut them into cubes. Drizzle the olive oil over the potato cubes and sprinkle a little salt and pepper over them as well. Make sure every cube is evenly coated.
  3. Roast the sweet potatoes in the oven for about 35 to 45 minutes. Flip the cubes halfway through to make sure they are evenly cooked. The potatoes are done when they tender and browned.
  4. To prepare the dressing, take a small bowl and a whisk. Add the tahini and the juice of a lime to the bowl. Whisk thoroughly to combine. Add salt and pepper to taste.
  5. To a large bowl add the sweet potato cubes, spring mix, chickpeas, tomatoes, cucumber, and red onion. Mix well.
  6. Drizzle the tahini dressing on top and add roasted pine nuts to decorate.
